You've probably noticed the new layout... like it? I love the color and wanted something new & mellow to fit my mood:) I've also added a new song to my playlist by John Waller called 'While I'm waiting'. You can skip to just that song if you want to listen to it, its awesome. I have a tendency to pick a new favorite song depending on what chapter in lfe I'm in and this is the current one. Last time around with my surgery it was 'Beyond Measure' by Jeremy Camp.
Anyway, Abner says I have a soundtrack for my life. That's a perfect description of it.
So, it is about a day away and I haven't been feeling well the past few days. Hoping its nothing, just allergies and exaustion from prepping, but we'll see how tomorrow goes.
I'm laying low today trying to rest up.
So, for a quick recipe to give you all since it'll be awhile before I'm cooking again:)
Apricot Glazed Carrots.... seriously, they are yummy! Got some recipe ideas on Allrecipes as usual(duh right) but I just kinda threw it together instead of followed it. So, here's what I did.
Apricot Glazed Carrots
2 cups baby carrots(half a big bag)
2-3 tbsp butter
1 tsp lemon zest
1 tsp lemon juice
1 scoop of apricot preserves(maybe 1/4 cup)
2-3 tbsp chopped parsley(flat leaf of course)
Steam carrots in some water till tender and drain. Keep carrots in pot, add butter and lemon zest and have stove on low heat. Let butter melt and add apricot preserves and lemon juice, stir to coat and add parsley before serving. Enjoy! It is really delicious, the lemon gives a freshness and the apricot adds a sweetness...hope you like it!
