Spinach Stuffed Chicken Breast


Oh my goodness, yet another great chicken dish...are you bored with plain ol' chicken? This is such a fast and yummy recipe to try! I didn't get to take a picture of it, but I found one on allrecipes that actually looks just like how mine turned out! Its a slightly different recipe, but I want to give credit to them.

Here's my recipe taken from these 2 recipes:

My version is just:

-2 chicken breasts-cut in half to stuff it(didn't roll filling inside or need toothpick, just stuffed inside)

-1/4 c sour cream

-1/4 c spinach, thawed and drained

-1/4 c of pepper jack cheese shredded(key ingredient, it made it amazing!)

-salt/pepper, sprinkle of italian seasoning, garlic powder

-2 pcs bacon


Mix filling and stuff inside chicken. Wrap with bacon and place in baking dish. Drizzle olive oil, salt&pepper on the outside and bake uncovered for 40 min. till chicken is cooked through. Enjoy! I think it would be great with rice and a cream sauce. I put it with pasta and a cream sauce, but it wasn't perfect... will keep trying. Hope you guys like it!
